"Food For the Soul starts with the seasonings" Chef J.L. Michaels

"Monday Monday" (The Mama's and the Papa's)

Hello Ladies and Gentlemen! Another new week has fallen upon us; Ready to explore and make the very best of what we do each and every day! :) As for me Sat. and Sun. was amazing! I had fun at both the Evanston Farmers Market (Sat.) and the North Park Community Market (Sun.) As a vendor it's always something very special when you have return customers come and talk about how great your products are or it's now time to "reload"!

I really cherish my senior customers because they ALWAYS have a bit of wisdom to share with me with EVERY visit. I take their dietary needs seriously because it truly important for them to be around for as long as possible.  Their warm smiles and kind words  really make a difference within this cruel world. After all they came before us and laid the ground work for the things we do today! In fact I met a female U.S. Air Force Veteran who was in around the Vietnam war!  She was AWESOME and it was a true pleasure to meet her, sell my products to her and listen to her stories and we talked about being veterans.

LOL I also have a lot of little kids who love to come to my table; from toddlers to teenagers who ALWAYS have the most adorable eyes. Full of honesty and wonder. I always ask them "Would you like some popcorn?"  The answer is almost every time a resounding YES!

I love to see the look of happiness on their faces when they eat some; they look at me with an even bigger smile saying how good it was. I always give kids a little free popcorn because it's simple and very healthy for them.

As a chef it's assumed that we know ALL of there cooking techniques in the world and can do them on demand; LOL that's not the case. Many chefs around the world are different and choose this profession for many reasons. For me it was to be able to own a restaurant and do my "Own Thang". Years have passed and my thought process has changed to owning a business in general instead of a restaurant; That dream will never die but it simply isn't the right time. I'm beyond comfortable with creating handcrafted gourmet seasoning blend for the masses to try! :)

With that being said I had to delve into cantonese cooking and I started with the most basic of dishes;  Egg fried rice. For YEARS I wanted to learn how to make it but never made the time!  I have mastered how to make my favorite (Shrimp Fried Rice) but that wasn't the "itch" that I really wanted to scratch! It was the egg fried rice that eluded me so 2 weeks ago I said enough of this! LET ME LEARN HOW TO MAKE IT!

So...
You're wondering what did I do next? Well..I did what anyone would do in the digital age  that we now live in and went to YOUTUBE to solve to mystery! LOL!  With happy satisfaction I can NOW say I have mastered that dish too (Hence the image you now see)

I HIGHLY recommend checking this out below:

I'm following this page because they are an awesome duo!; The son is so wonderful and his dad is someone who is truly special! Such a gift in what he has done for over 50 years and you can see the love that he has for his family! :) THIS is where I will "got to school" to learn about cantonese cooking!   I hope that you will enjoy his website/YouTube page as I do! :)
